Tom's Blog: PILOT
One of the most motivating, and occasionally daunting, aspects of working in the bar industry is that there really is no ceiling on what there is to learn. Being in the particularly privileged position of living in Tokyo, I have world-class bars aplenty on my doorstep which I can pop into for a quick drink and watch expert bartenders and mixologists perform magic in front of my very eyes. It’s like getting into Hogwarts, only the acceptance letter arrives via hangover and you can’t quite remember if you’ve got some girl up the huffleduff.
Which means I’m never at a loss for inspiration to experiment with/lay waste to new ingredients and hone my own bartending skills. Having Bar TRAUMA’s own master as my friend/mentor/sensei/senpai (notice me) also makes each and every day at work a learning experience in and of itself, and not a day goes by where I go home without having learned something. That’s a rather nice set-up for a job now, wouldn’t you say?
Except the ol’ grey matter’s not quite as good with this “retaining information” business as it was ten years back, and with the majority of what I learn being in Japanese/not English, you’ve got a recipe for memory mayhem right there.
So these blog entries will function twofold: as something hopefully of intrigue to you, the reader, from which you can get a glimpse of what goes on at Bar TRAUMA behind closed doors (it’s twenty percent interesting and eighty percent bickering tbph); as well as revision notes for myself whilst I catalogue my gradual slide into dementia…
